I don't think such covers are necessarily "better". They've just been made into a more "pop" version that's more palatable to the masses. Manfred Mann popularized Do Wah Diddy Diddy in the exact same way. If the cover version is the first version you've ever heard and liked, the original version will be the one that seems like the cover, and you'll tend to like it far less.
Having said that, there are a few artists who are great songwriters but not necessarily known for their vocal abilities who make this phenomenon more likely to occur.
