shouldn't the conservative solution be to simply start a university that does cater to this market and let the market sort it out?

I thought there were some Catholic universities out there. This one comes to mind.

I'm guessing this school accepts credits for a course on morality in literature.

Yup, and I bet the Nathaniel Hawthornes 'The Scarlet Letter' is taught completely differently at Notre Dame and Liberty.
