I usually make a salad with spring mix, apple chips, feta, pine nuts, dried chives and honey mustard vinaigrette or raspberry vinaigrette. Fab! I might have to resort to it during the weekend and meatify it with turkey leftovers.

All I did was take an organic box-mix, followed stovetop directions, and filled crust. But I do have a favorite crust recipe: 2 c. unbleached flour (white or whole wheat or pastry, any will do just fine) 1/4 c. oil 6-7 tbsp. water (generally I use 7) It's very light and flaky.
