There's generally enough grease that oozes out to keep the cheese from sticking to the upper cooking surface. The crust will be nice and crispy and the cheese will be nicely browned. You can do this with a frying pan over low heat as well. You can even do quick flip to heat/brown the top of the slice. Mozzarella seems to an amazing ability of maintaining its structure and elasticity when fried.
