Essential to start with beautiful, floury, Irish potatoes (*).  Boiled and served with butter, salt and pepper.  Mash 'em with your fork on the plate.

* No offense to Idaho but it's honestly not even a fair fight.

Forgot to add in my favorite -

Barely mashed, still fluffy, with lots of butter and salt.   Gravy is unnecessary, but a nice bonus.

I like them with either butter/garlic or gravy.  Prefer them to not be too lumpy but do like the skins left on.

Yummy, yummy, yummy, yummy!!! :D


My favorite mashed potato recipe is really simple:

Boil potatoes (with or without skin)
Mash slightly, then gradually add milk while continuing to mash until fluffy.*
Place in serving bowl, then sprinkle with paprika.  Place square of butter in center.

Place potatoes on plate, make a gravy lake**, and place butter on top.  Salt and pepper to taste.

*may include a tbsp or two of butter.
**mashed potatoes as a snack usually excludes gravy and replaced with extra butter.


Baked potato:

Take any potato(es), preferably yukon or new (red have a slightly bitter skin, you know), and bake in oven.
Slice in half, butter then mash slightly.  Salt and pepper to taste.  Place a dollop of sour cream on top.

No!  That article has me wishing I had time to make a snack.  But, alas!  I'm having an early supper tonight.  Guess I'll have to put them off to a mid-night snack.

Boiled, then peeled, then diced roughly, then mashed incompletely.  With the right potatoes, it's magic.  And without the butter, sour cream, and all that other crap.  Let the spuds shine.

(Plus, the lathering can get you in trouble with the law.)

I'm pretty sure it was the misinterpretation and confusion of the definitions for "lathering" and "slathering" that gets you in trouble with the law.  That, and eating mashed potatoes as a snack.  Thankfully, the law isn't extended into parallel universes.
