Um, I don't know what sushi you're eating but might you, perhaps, have been mislead as to what freshwater eel actually is?
Possibly eel sounds familiar but I've tried more than just eel.  They all seem to grow when the meet saliva.

bear, elk, buffalo, deer, ostrich, squirrel, duck, goose, pheasant, grouse, "alligator".... Yum, yum!  But those are all cooked. 

Oh, and I eat fish, too.  Just not raw.

How do you feel about the non-raw sushi options?  crab, shrimp, egg, etc.

I'd probably give them a try, but I don't really care for shrimp and I haven't tried any other bottom-dwelling sea creatures.

Definitely give sushi a try then.
You probably don't cook the fresh caught fish ALL the way, that'd be like cooking a really nice steak to well done.  Raw sushi is not much different than eating the inside part of a seared fish steak.

Besides, just the seaweed and rice is pretty tasty on its own  - you can always get veggie ones if you're feeling squeamish. 

Well, since most of the fish I've eaten have been caught locally, the fillets usually aren't thick enough to be considered steaks and can be cooked thoroughly without ruining them.  Oh, and my dad knows how to grill halibut thoroughly without ruining the steak, too. Cool  Oh, yum!  Now, I wish we had some!

If I go somewhere where they serve sushi, I think I'd give it a try, at least the veggie and maybe crab or something similar.  But I haven't been anywhere where it's on the menu, and I wouldn't choose something raw.  Cheesy

That's too bad.  I had this image of you chowing down on all the unserved slabs of fish at the end of the night before they were thrown out.

So what do they do at a sushi restaurant with the leftover sushi that they can't serve.  Do they use it for other (cooked) dishes the following day?

I once worked as a busboy/dishwasher at a thai restaurant (oddly I think it's one that Aske has mentioned before (thai place...different location, though))  Sometimes there would be a huge amount of mee krob at the end of the night, and I'd get to go to town on the leftovers.

I always thought of sushi as disgusting raw fish.  My wife introduced me to California rolls 3 years ago.  Now, I'm considerably more adventurous than she.

1. Spider roll
2. Bubba Gump roll - local roll with crab, shrimp, eel sauce
3. Shrimp Tempura rolls
4. Lots of sashimi

My 6-year-old's favorite food is the CA roll or spicy CA roll with lots of wasabi.
