We normally make about 6 at a time, and they are gone in a few hours.  Grin

6 pies among 2 people, hmm, let's see, that's about 10,000 calories per person.  Good thing Thanksgiving comes only once a year!  (Good thing for me too, actually.   Shocked)

It takes a good deal of restraint not to finish a whole pie in one sitting.  And I kinda need those calories...
i just want to see what 10 propagated quote boxes look like.

We could, but Thanksgiving was so long ago, there aren't any leftovers left at my place.

I love coconut cream pie, and I demand a recipe!

Sorry, I cheated.  No recipe.  All I did was take an organic box-mix, followed stovetop directions, and filled crust.


But I do have a favorite crust recipe:
2 c. unbleached flour (white or whole wheat or pastry, any will do just fine)
1/4 c. oil
6-7 tbsp. water (generally I use 7)

It's very light and flaky.
