Ha, I'm so behind on this forum and finally had a chance to read this.

Weird stuff on that list.  I like the idea of giving out gold stars, though.  I'm tempted to start carrying a pack of those around and just start giving them out to people. (the barista at the coffee house, parking garage ticket taker, people in the elevator...)

Who the heck freezes potatoes?

Actually, I hate to admit it, but frozen baked potatoes are quite handy. Particularly if you like hash browns.

Yup. Bake up a mess o' potatoes. Freeze 'em in the tinfoil. Throw one or two in the fridge the night before to thaw and then just shred with a cheese grater (you can peel them first if you want), throw 'em in a pan with some olive or canola oil- instant hash browns that don't taste like instant hash browns.

it's a lot easier if you prep them before freezing.

i'd do 2-3 things different myself.
shred them before freezing. 'marinate them' in a bit of spices/herbs/oil/beer/whatever  while thawing. and 'fry' them on a rangetop griddle (in grapeseed oil).

I use a rosemary infused olive oil to fry them. Yummy.

oh, and as usual (it's been a while)

while i strongly advocate grapeseed oil....  i must caution anyone who uses it... it has the highest smoke point of any commonly available cooking oil, as such, should you choose to use it, be very careful of spatter.

Is grapeseed oil better(health,taste, o/w)
Is it spendy?
We recently started eating a lot better,(very low fat, low cal. etc.) and are now using a lot of olive oil.
